
According to my Hallmark movies, it’s Valentine’s Day! Time to spoil your sweetie, or yourself. What better way to do it than with a homemade treat? If you have a s’mores loving honey, then these cookies may be just what St. Valentine ordered. And if you’re one of those nutters that’s counting down the days until summer returns, this recipe will give you a little hope to cling to.
It took me a few tries to get this recipe just right, but I think I finally have it all sorted. Sadly, my favorite graham crackers have been discontinued (boo Trader Joe’s) but any good brand will suffice. I do recommend you get a high quality chocolate chunk though, it’s worth the little extra cash.

S’Mores Cookies
½ cup Melted Salted Butter, cooled
½ cup Browned Salted Butter, cooled
¾ cup Light Brown Sugar
¾ cup White Sugar
2 Eggs
2 tsp. Vanilla
2 cups Flour
½ cup Finely Ground Graham Cracker Crumbs
1 t. Baking Soda
1 t. Salt
½ pkg. Semi-Sweet Chocolate Chunks
1-1½ cups Mini Marshmallows
4-5 roughly chopped graham cracker squares
Combine flour, graham cracker crumbs, soda, salt & marshmallows in a small bowl. Set aside.
Cream butter & sugars until light & fluffy.
Add one egg and beat thoroughly. Add second egg & vanilla and beat until fluffy.
Stir in flour mixture just until combined. Then stir in chocolate chunks & graham cracker pieces.
Bake at 375° for 8-10 minutes or just until set & edges are starting to crisp.
