
Do you love chocolate? Peanut butter? How about the combination? I do! And so does The Editor. (In case you missed it, here’s a little bit about her: https://shannonrbrown.com/2023/06/28/the-editor/.) I mean, is there really a more tasty combo on the planet?
The Editor and I occasionally have a girls night and I usually bake us a goodie to share. A few months ago I asked her, in preparation for an upcoming evening together, if she had any requests.
“Something chocolatey and peanut-buttery,” she replied.
“Challenge accepted!”
The result is true ooey-gooey deliciousness. And now, you can make your very own with the recipe below. I challenge you to eat just one!
Chocolatey Peanut Butter Cup Cookies
1 Stick Unsalted Butter, Softened
½ cup chunky peanut butter
¾ cup White Sugar
¾ cup Dark Brown Sugar
2 Eggs
2 tsp. Vanilla
1 ½ cups Flour
½ cup Dark Cocoa Powder
1 tsp. Baking Soda
½ tsp. Salt
24 mini peanut butter cups cut in six pieces
Combine flour, cocoa, soda & salt in a small bowl. Set aside.
Cream butter & sugars until light & fluffy.
Add one egg and beat thoroughly. Add second egg & vanilla and beat until fluffy.
Stir in flour mixture just until combined. Then stir in peanut butter cups.
Bake at 350° for 8-10 minutes or just until set & edges are starting to crisp.
